
Amarone della Valpolicella DOCG, Fattori
Vineyard: Corvina and Rondinella.
Vinification: The grapes remain in the drying room until the end of November/beginning of December, then pressed and fermented in stainless steel. Malolactic fermentation follows immediately.
Ageing: In 500-liter oak barrels for 24 months and in bottle for 1 year before release.
Tasting Note: Complex fruity extension with hints of cherry, black cherry, and balsamic notes of liquorice. Spicy, hints of black cherry and cocoa. The finish is dry, pleasant, and elegant.
Food Pairings: Wild game or shaved aged cheeses. Excellent with dark chocolate.
