Paxton’s home of McLaren Vale, 40 kilometres south of Adelaide, is known as ‘Sea & Vines’ which perfectly describes the essence of its favourable geographic location in the Gulf of St Vincent; its unique terroir soils, the winds, temperate, and mediterranean climate. All of these unique factors are at the core of why the region’s vineyards produce such high quality premium grapes.
Their mission is to produce and showcase the region’s fruit quality, varietal expression and natural diversity, particularly with Shiraz, which is now well recognised as the region’s top performing variety.
Vineyard & Winemaking – Paxton believe biodynamics is the most advanced form of organic farming. It uses natural preparations and composts to bring the soil and vine into balance, resulting in exceptionally pure and expressive fruit.
Paxton’s vineyards comprise of six Biodynamic properties. MV ‘McLaren Vale’ or ‘Multiple Vineyard’ Shiraz is a blend of 100% Shiraz from four of the Paxton vineyards, and has been developed to highlight optimum fruit flavours.
Tasting Note –
AROMA: A layering of chocolate, licorice and aniseed with ripe plum and blackcurrant notes
PALATE: Full bodied wine with a beautiful primary fruit character of redcurrant and fresh mulberries. Lovely integration of oak gives a seamless texture and tannin profile.
