Description
Tasting notes – Intense, black fruits and fig aromas dominate. The velvety and fruity palate oozes fresh cherry, nut notes and finishes with soft tannins.
Jean-Claude Mas acquired this estate in 2015, located between the city of Carcassonne and Narbonne, a completely renovated wine-making facility and cellar ensures a consistent and fine quality.
Grape varieties: Carignan 45%, Grenache 30%, Syrah 15%, Mourvèdre 10%.
Winemaking – Separate vinification for each grape variety. In the case of Carignan, after selective sorting, the intact grapes are placed in vats and subjected to carbonic maceration. Grenache and Syrah ferment for 5 days under controlled temperature, followed by a maceration of 3 weeks. After the malolactic fermentation we assemble the wines.
Ageing – 30% of the wine is then aged in American and French oak barrels for 6 months.
Food and wine pairing: Meats in sauce, duck confit or grilled beef ribs.
