In the late 18th century, the current generations great-great-great grandfather was deeded the land on which the winery sits and they’re still there…! Fast forward to 1984, when the decision was taken to replace the indigenous grapevines with traditional Old World varieties and taken the Niagara wine scene to the next level
Vineyard and Winemaking - Niagara’s seasons are very delineated. Summer is warm and autumn is cool followed by a quick shift to winter’s cold; these are the perfect conditions for producing Icewine. When winter arrives the berries are typically harvested at night when they are frozen at -8 ºC (minimum) and when they are at least 36 Brix (% sugar). Fermented in stainless steel tanks.
Tasting Note - Tropical aromas dominated by pineapple and mango. The palate is tart and piquant but very rich, complex and persistent. A good pairing with fresh fruit or fruit-based desserts and strong cheeses. 199g/l sugar.
